Simply Asparagus!

Tonight’s dinner featured this quick and easy-to-prepare, oven-roasted asparagus. It goes well with just about anything and is nice as an appetizer. It’s equally delicious served warm or cold and is also a nice addition to salads. Mmmm, I love this stuff!


Roasted Asparagus with Red Peppers Recipe

Serves 4 | Vegetarian1 pound fresh Asparagus, trimmed
1/2 large red bell pepper, seeded, finely diced
4 cloves garlic, minced
2 scallions, thinly sliced, green and white parts
2 tbs. fresh lemon juice
2 tbs. olive oil
1 tsp. red pepper flakes (optional)
1 tsp. saltPreheat oven to 450 degrees. Combine all ingredients in large bowl; toss well to coat. Arrange veggies on baking sheet in a single layer. Roast until tender, approx. 20 minutes, turning once to cook evenly. Plate and serve immediately.
